CALIFORNIA MODERN UNVEILS NEW MENUS, NEW LOOK

SAN DIEGO, CA (July 10, 2013) – George’s at the Cove in La Jolla proudly debuts a new tasting menu format in their fine dining restaurant, California Modern, furthering their commitment to creating exceptional dining experiences for locals and San Diego visitors alike. In addition to implementing new tasting menus, the dining room and bar at California Modern have been refreshed with new design elements to offer guests a more intimate, comfortable setting.

 

The California Modern menu is a conversation about the lifestyle, ingredients and sense of place that is San Diego, sourcing locally grown or harvested products whenever possible and using them in creative, seasonally driven preparations that surprise and delight. The new menu structure allows for a la carte ordering, but the emphasis on tasting menus tempts guests to experience the restaurant in a formal yet fun way, and explore more of the flavorful fare created by Executive Chef and Partner Trey Foshee and his team.

 

“We listen and create personalized experiences around our guests’ desires, whether that is a multi-course tasting menu, a customized experience for any special occasion, or simply seasonal a la carte dining,” says Foshee. “Our dining room and kitchen staff are flexible to our guests’ expectations and can accommodate a broad range of service styles from one table to the next.”

 

New menu items include Chino Farms “corn pudding” with grilled onion relish, porcinis, Dungeness crab and smoked lemon; campechana with local fluke, razor clams, spot prawn, cucumber and avocado; grilled local sardines with cedar, marinated mussels, Aori Ika, wild fennel and whipped cream; and a roasted pigeon dish with liver, beets, mulberries, buckwheat and wild greens.

 

The signature four-course tasting menu allows guests to choose each course from a series of dishes. Each course offering includes vegetarian selections that can also be modified to be vegan.

 

An eight-course chef’s tasting menu offers an experience that is an expression of ingredients at their peak, with wine pairings available.

 

The ultimate culinary journey is the immersive 12 to 14-course progressive menu that is TBL3(Table Three), available to one table each evening with advance reservations. Guests enjoy the prime ocean view table for the night and a food dialogue that encompasses Chef Foshee’s “San Diego on a Plate” cuisine at the highest level.

 

New lighting complements the impressive ocean views and highlights the addition of new artwork on the restaurant’s east wall by acclaimed artist Claudy Jongstra, who creates unique art installations made from wool that is grown from her own flock of sheep in Belgium. Using proprietary sustainable dyes, she produces works of unusual complexity and warmth. “We have recently focused our attention on making the environment in California Modern more intimate,” says George’s at the Cove founding partner George Hauer. “We added overstuffed colorful couches to enhance the feeling of a luxurious, yet comfortable space and asked Claudy to do a custom piece just for our dining room. The finished product turned out beautifully.”
